What You'll Need
Lots of Cherries, pitted (okay, about 2 cups!)
2/3 Stevia Sweetener (or like product)
2 teaspoon cornstarch
13" x 9" baking pan
Preheat your over to 400 Degrees Fahrenheit and rinse the cherries
Pit the cherries. It's going to take a lot of patience - it's worth it though.
Mix the cherries, stevia sweetener, and cornstarch, tossing them with your hands in the pan to mix.
Roast for 40-45 minutes in the oven, until the juice is thickened and bubbly. Let cool in the fridge
Stir in as needed - and voila! A yummy, healthy treat for you!

It's funny how you learn about something new and start to see it again :) My cousin just sent me a pic of her outcome of the goat cheese and roasted cherry ice cream :) I will be posting it on Monday, but it must be good to see it twice!
