Yup, it's really not quite spring yet, and the weather went back down to about 40/50 today. I don't care, though. I wanted to wear my new coral wedges with something. I love this stupid linen skirt, but we have a bad relationship. It sucks for work. It wrinkles like crazy and the middle button just causes weird wrinkles to occur. The. Worst.

I had a nice visit to Akron this weekend to pick up Teemo from my in-laws who were super helpful and watched him while I was traveling this week. We got to eat at The Lockview, probably my favorite place in Akron, and I got a grilled cheese with mashed potatoes and American cheese - it was delicious!

My mother in law and I also had a nice relaxing day of walking around a near by mall where I got a pair of shoes with a coupon and a gift card to Macy's I had. I've never really owned sandals with heels, so this is a great thing to add to my wardrobe and I just love the color. I also got yummy popcorn!

In 2009, I took a trip to Athens, Georgia to visit my friend Alyson while she was doing work at the University of Georgia. We ate at this delicious called the Grit where we devoured this delicious tofu. I asked the guy what they used - he said they were double fried in soy sauce and oil then sprinkled with nutritional yeast. Easy enough, I thought. I spent time emulating the recipe, and actually did not find nutritional yeast and at first used something completely different that a clueless guy at Whole Foods led me too. I eventually found the recipe online here and it is also available in their amazing cookbook, but I think a step by step may help a lot of people. All of the recipes never give amounts for the soy sauce, oil, or nutritional yeast, or really any guidelines, and there is a fine line that is easy to cross. Too much soy sauce and it's a salty soggy mess and too much nutritional yeast and they burn easily or become a strange texture. Too little of either and you have some dry, flavorless cubes. Here's how we do it.
After brunch at a cafe in Winter Springs, Leah and I headed down to Downtown Disney and Jason got his oil changed and met us there. We had margaritas, traded our Vinylmation toys, and got some sun!

The Vinylmations that Leah and I got in the trade (it's a blind box and you don't see what you get - it's a fun process, you can read a bit about it here - I also think I may do a post about it later this year ^_^) Anyhow, it's a 'April Fool's' jester form the holiday 3 series and a crying baby from the Urban 6 series. Jason and I traded the baby and still have the jester, but don't think we will keep him.

I kind of love Orlando. Maybe I just love seeing my husband. For St. Patrick's day, my dear friend Leah drove up from Fort Myers to visit and we went out with her and Jason's classmate David from Iceland (only I don't know the correct Icelandic spelling sorry!) I put a photo or two on instagram, but we mostly took photos with the big camera before going out and while the sun was still out!

We got to go to Tijuana Flats - a little local chain I quite enjoy with the most amazing hot sauces ever. Yum! I wore my Star Wars dress with green accents. Not quite festive - but some guy did try and buy me a drink because these were his bed sheets as a child. Haha!

I'll be gone and not able to reply this weekend because I am going on a trip to visit my husband, Jason, in Orlando. I haven't seen him since we went to Athens, Georgia for a day in January. Since I'll be gone seeing him, I thought it would be the perfect time to post about our strange little situation.

I think people's befuddled reaction to our situation is quite funny. I mean, how would you react when the recently married girl you just met suddenly mentions her husband lives in Florida? It is strange, I know, that a couple married four months would choose to live apart. Jason and I were lucky, we have lived together essentially since we met when I moved into the extra space in his dorm room, unofficially. Just me, Jason, and his two roommates. Since then, we have shared two apartments and a lovely house that was incredibly hard to leave, but we had to see the big picture.

Upon graduating, we both began looking for jobs. As time went on, we knew Jason should go back and get his graduate degree before children and really settling down somewhere. Plus, the degree would help him fulfill his dream of being a game designer. I had interviewed for a few jobs, but was planning to probably move with him after not hearing any definite answers. In the same week that Jason was accepted and put his deposit down for graduate school in Winte Park, Florida, I was offered a wonderful position as the sole industrial designer in Pennsylvania. We decided that I should go and work on getting a career and life while Jason 'roughed' it in Florida.

I tried to make my apartment feel like home, at least!

I am not saying it is easy. Or that it is impossible either. There are many things I miss, but these are the top things I have learned so far. Read on!
