Jelly Ice Cream

I LOVE peanut butter and jelly. It's been a weird thing with me lately. I've made tons of little versions at home for lunch, but I wanted to try and make a dessert. So here is one half of a peanut butter and jelly dessert - the yummy fat free ice cream part!

What You'll Need
Jelly (I used Bonne Maman Mixed Berries)
Fat Free Half and Half Cream
Ice Cream Maker

I used 2 Tablespoons jelly and 4 Tablespoons cream to make a single serving. Just mix two parts jelly with 4 parts cream - like 1/2 cup jelly and 1 cup cream.

Melt your jelly down until it is vicious over a medium-low heat. Then take off the heat and mix in the cream.

Pour into the ice cream maker and freeze! Easiest thing ever.

I crumbled a vegan peanut butter cookie on top of the ice cream. If you want the recipe for the cookie, go check out my post on Kelsi's blog to learn to make them! Then make some jelly ice cream for a peanut butter and jelly themed dessert.

  1. Ohh I love Bonne Maman's preserves! They are the best.
And ahh, this is such a good idea. Great way to heighten the sophistication of peanut butter and jelly. :)

  20. mmm, this ice cream sounds delicious. It's so funny to read this post right now because only last week I made the first peanut butter and jam sandwich I'd had in ages. Like, we're talking years! And while eating it remembered just how much I love the combination and why it was an all time favourite when I was little. You have confirmed that p&j is good, no matter how old you are! :)
