Pomegranate Punch Cocktail


I love holiday drinks - and while Christmas has passed, this pomegranate punch would make a great treat for New Year's eve tonight. The best part of this drink - I used Cascade Ice in place of simple syrup and soda water - making the drink both easier to make and a little less heavy on the calories and sugar content. Cascade Ice is quite tasty on its own - it uses some real fruit juice so it's not fakely sweet or tart, just yummy! This was really tasty and was so pretty with the sugared rim.




What You'll Need
Cascade Ice in Cranberry Pomegranate
Pama Pomegranate Liqueur
White Rum
Mint Leaves
Ice


To rim the glass in sugar, place sanding sugar on a plate. Dip your finger in the Pama pomegranate liqueur, and carefully dab around the glass. Then, roll the edges in the sugar. The sugar in the Pama should help the sanding sugar to stick to the glass perfectly.


In a shaker, muddle the mint leaves with 2 ounces Pama.


Add in 2 ounces white rum, then the bottle of Cascade Ice, as much as you can fit in. I had about 1/4 or less of the bottle left, and used that to top off drinks of anyone who found it too strong, which didn't really happen.

Shake for 30 seconds, then strain over ice into a new glass rimmed with sugar. Garnish with mint and serve.
