I adore chocolate cookies - especially thin, crispy ones. I also love mint. So when these mint M&Ms were on sale in the Target Cartwheel app, I got the great idea to create some thin, crispy, yummy cookies. These are perfect for the holidays!
What You'll Need
1 Stick of Butter, softened, but not too soft! I find rubbing between my hands for a minute while in the wrapper works well!3/4 white sugar
3/4 brown sugar
1 large egg
1 Teaspoon Mint Extract
1 1/4 cup flour
1/4 cup cocoa powder
1/4 teaspoon salt
1/2 teaspoon baking soda
1 bag Holiday Mint M&Ms
Preheat your over to 350 Degrees Fahrenheit and get 2 non-stick cookie sheets.
Begin by beating the white sugar, brown sugar, and butter together in a mixer. Once smooth, add in the egg and mint extract and mix on a low speed until integrated.
Sift together the dry ingredients (flour, cocoa powder, salt, and baking soda) into a small bowl. Once mixed, slowly pour in and beat over a low speed. I usually pour in 1/4 at a time.
Mix in the M&Ms either by hand or over a REALLY slow speed. I tend to mix a few in over slow speed, then by hand as I scoop.
Scoop by the tablespoon onto a cookie sheets. Should make around 24 cookies. Bake for 10-12 minutes or until crispy.

ReplyDeleteThese look absolutely AMAZING. I have been on my cookie baking game lately (more like eating all the dough and ending up with 3/4 the regular recipe... woops!) and these look like they'd be a lovely addition. I'm not a fan of mint, though, but I'd definitely swap 'em for regular m&mmies!
