Grilled Potatoes and Onions

Years ago, Jason and I moved into our home and got all excited to get a grill. Sad part was, we never really figured out where to put one, so two years passed without a grill. Once we moved into our new place, we found we had the perfect deck for grilling out. I was so excited to be able to make potatoes and onions on the grill, one of my favorite things my mom made when we grilled out at home.

What You'll Need :
4 Medium Sized Potatoes
1 Onion (Or two if you are feeling really in favor of onions)
Butter or Buttery Spread
BBQ Spice (We use Grippo's, a local Cincinnati favorite. You can use a similar one or make your own. If you make your own, I suggest adding a small amount of hickory smoke powder) or Seasoned Salt

Wash your potatoes well. Cut off any parts that don't look so pretty.

Slice 2 potatoes into 1/8" thin pieces. Layer onto a piece of non-stick foil.

Cut 1/2 the onion into thin slices. Layer atop the potatoes.

PotatoesOnionButterSeasoning

Top with three slices of butter or buttery spread and a good amount of seasoning. Repeat these steps with the other two potatoes, the other 1/2 the onion, and an additional 3 slices of butter/buttery spread and seasoning.

Top with another piece of foil and fold to make a packet. Place on the top rack of the grill and cook for about 20-25 minutes while your meats/corn/whatever else cooks. We had some filet mignon with this batch (see corner). We're so cute, sharing our steaks and what not.

Remove from grill and devour.

  5. Wow this looks AMAZING (I love potatoes and onions so this is no surprise). My apartment-mates and I also got a grill recently and are shocked with how much we seem to use it. We probably fire it up three nights a week!
