So by now I am in Florida with Jason on a Sunday probably packing the boxes I helped pack a year ago and trying to decide what furniture we can fit into the old Toyota van Jason's parents have kept for the sole purpose of moving the kids around. In spirit of his homecoming, here is a recipe for a soup similar to the one Disney makes at Le Cellier steakhouse. There are slight adjustments - like this one is totally vegetarian! This is one of our favorites to make together and is delicious topped with bacon, hamburger, or a little extra cheese.
What You'll Need
2 Medium Yellow Onions
Butter
Vegetable Broth
Whole Wheat Flour or All Purpose Flour
Nutritional Yeast
Fat Free Half & Half
Pale Ale or Similar Beer (We've used Killian's, Troegs, Miller, and more)
Worcestershire Sauce (Vegan type available here )
Seasoned Salt
Garlic Powder
Chili Powder
16 Ox. Block of Sharp White Cheddar
Chop (or as my husband says, chip chop) your two onions into small pieces and toss into the melted butter. Sprinkle with seasoned salt - maybe a teaspoon max - and cook until translucent.
While your onions cook cut your cheese into smaller blocks.
After your onions are nice and soft, add 2 Tablespoons of nutritional yeast. (Or if you don't have this, just replace with additional Tablespoons of flour)
Then add 2 Tablespoons flour (or 4 with no nutritional yeast) and stir well, cooking over a low/medium heat for about a minute.
Add 1 cup of vegetable broth and stir well to make a thick paste like substance. Then stir in an additional 2 cups of vegetable broth.
Add in 3 cups of fat free half and half (or cream) and stir. Over a medium heat, slowly mix in all of your cheese block.
After all of your cheese has melted in, add 1/2 cup beer. You can add a bit more if you like - just taste before adding more!
Season with 1 teaspoon garlic powder, 1 teaspoon chili powder, and 1 Tablespoon Worcestershire sauce. You can always taste and add more if you like.
Serve with yummy, crusty bread or pretzels!
that sounds super tasty - I will have to give it a try. I always have a hard time tracking down sharp white cheddar - but it's so good!

I just made this recently too!! Yours looks way better though. I actually hated mine. It tasted too much like beer! Which I would usually enjoy, however I used cheap beer :( The guys I had it with loved it though! They also love cheap beer.

Looks so interesting - I've never thought of using beer in a soup. Also Worcestershire sauce isn't vegetarian, it's made with anchovies.

I had it in my lats post, but there is a vegan option available widely. Chancse are, if you are vegetarian, you have it. It's what my husband and I use at his home.
