'applewood smoked' scrambled eggs

I am not a big breakfast person. I like breakfast food, but chances are, if I am eating it, it's probably after 11am. But I do love eggs, bacon, toast, and pancakes for all it's worth. So on this Sunday morning I wanted something with a smokey flavor, like I had cooked it in the grease from bacon. But I find bacon grease kind of disgusting when I have to cook with it, so I decided to make a completely vegetarian egg dish by using a few items in my pantry. (PS looking for other vegetarian recipes - I've got lots!)

What You'll Need
1 Cup Egg Beaters (or 2-3 large eggs)
1/4 Teaspoon Liquid Smoke
2 Teaspoons Soymilk or Skim Milk
1 Teaspoon Apple Cider
1/2 Teaspoon Smoked Sea Salt
Pepper & Seasoned Salt To Taste
Sharp White Cheddar
Unsalted Butter or Margarine

First, in a skillet, melt about 1/2 Tablespoon of butter. You don't need much - just wanna grease the pan a bit.

While that's melting, whip together 1 cup of egg beaters (you know...eggs from a carton.....it's what I had), 1/4 tsp. liquid smoke, 2 tsps milk or soy milk, 1 tsp apple cider, and 1/2 tsp smoked sea salt (or seasoned salt if you need.)

Pour your egg mixture in. Stir slowly with a spatula scraping the edges over medium heat. They will start to harden.

Once the eggs form completely but are not quite done yet, add in 1/4 cup cheddar and salt and pepper to taste and stir well.

I continue cooking until slightly browned because I like my eggs well done! Season with seasoned salt and pepper near the end.

Serve with bacon, turkey bacon (my choice - Applewood Farms stuff is so yummy), tofu bacon, or whatever your heart desires! So yummy!

I got a little full at the end...so the leftovers went to Teemo! Mine my crappy apartment flooring.

  6. This looks amazing. Breakfast is my favorite meal, but I hardly ever eat it (and definitely not before 9 AM). Those eggs look heavenly. Even Teemo likes them. :)

  9. Teemo knows something good too. I love breakfast actually, but generally eat a proper breakfast on the weekend. Waffles and Eggs Benedict is my favourite. xo

  25. Great recipe! We haven't tried "eggs" since we went Vegan. We have so recipes for TOFU ones, but I'm like you, not a big breakfast food person anyways. This looks really good though! :) Also, I know where you got that Cheshire Mug! I should of bought that while I was at Disney. Maybe the next vacation...
