Red Onion Jam

Onions are a delicious thing and have so much versatility. I have been really interested in integrating onions into my recipes lately as they are quite healthy and yummy. I love the idea of onion jam and wanted to make my own for mine and Jason's burger recipe over the Fourth. This can be served with many things and stored in the fridge for up to a month!

What You'll Need
1 Tablespoon Olive Oil
2 Red Onions, sliced and chopped, but not minced
1 Teaspoon Salt (preferably smoked salt!)
5 Teaspoons Honey
1//4 Cup plus 1 Tablespoon White Sugar
1/4 Cup Red Wine Vinegar
1/2 Cup Red Wine (I Used Merlot)
Pint sized Jar to store jam in.

Chop your onions so that they are not quite minced, but large pieces. Hopefully my image helps here.

Heat your oil on a medium heat. Pour onions over the oil and stir. Then put in 1 teaspoon of salt.

Cook your onions until translucent and soft, about 10-15 minutes.

Add 1/4 cup plus 1 Tablespoon sugar and 5 teaspoons honey and stir well until sugar is dissolved.

Add 1/4 cup red wine vinegar and 1/2 cup red wine and stir.

Simmer over medium high heat until all liquid is gone and the onions are caramelized, like shown.

Serve! We ate it first on toasts with Vermont white cheddar and sage. It really shines on a burger! This was a total hit for the Fourth.

  2. Oh wow, this actually looks super fantastic and delicious, totally want to try this out! Caramelized onions would be great too, if that would even work? I've had caramelized onion topping on baked brie.... omg to die for!

  6. I've never tried onion jam before, but it looks delicious - I love the sweetness of the red onions and make a poppyseed dressing with them from time to time. Is this a Pennsylvania Dutch thing? They always have the best jams and butters imaginable.
