Banana French Toast

Tonga Toast

When we visited Disney, I enjoyed this amazing dish called Tonga Toast at Kona Cafe. Essentially, it was a large piece of banana stuffed French toast deep fried and rolled in cinnamon sugar. While delicious, I found the deep frying part too heavy and the cinnamon sugar part on the outside far too sweet. So I decided to do my own version! It turned out better than I could have imagined, and used none of the whole deep frying process.

Banana French toast

What You'll Need
2 Slices Sourdough bread, 2" thick
1 Banana
1 Egg
1/4 Cup Fat Free Half and Half
1/2 Cup Sugar
1 Teaspoon Cinnamon
Butter or Buttery Spread
Optional : Maple Syrup or Powdered Sugar

Sliced Bread

Slice the bread to 2" thick. Then, slice into the bread creating a pocket without cutting all the way through.

Banana In French Toast

Slice a banana into thin slices. Put as many slices in the pocket as you can fit.

Butter On Griddle

On a griddle or large frying pan, melt about 1 tablespoon of butter per slice over medium heat.

EggBeaten

In a medium bowl, whisk together 1 egg with 1/4 cup fat free half and half, 1/2 cup sugar, and 1 teaspoon of cinnnamon.

Toast Being Dipped

Drench the slices in the egg mixture and place on the hot griddle or skillet.

French toast On Griddle

Grill each slice until lightly browned on each side.

Maple Syrup Pouring

Pour syrup over if you like - I like maple syrup with this, but it's also good with a strawberry compote! I also sprinkled powdered sugar over it for a little extra sweetness.
